Papa’s Chili Recipe

October 14th, 2009 at 03:47pm Under beef+ chili

For all those cold days and nights, this chili will hit the spot.

Rate this recipe and see reviews here!

Ingredients

2-4 lb. ground chuck
4 cans tomato sauce
1 medium can tomato paste
1 large can tomatoes
3-4 Tbs. chili powder
1 large onion
4 cans chili beans
1-2 tsp. hot sauce (I use Texas Pete but any kind will do)
Salt and pepper to taste

Directions

In pan cook meat and onion. Drain grease. Add 1 can tomato sauce and 1 Tbs. chili powder. In large pot add 3 cans tomato sauce, can of tomatoes, tomato paste, 2 Tbs. chili powder and salt and pepper. Cook on medium heat. Add 4 cans chili beans and the meat and onion mixture you cooked in the beginning. You can add more chili powder and hot sauce to your taste. Let simmer on low heat 2-5 hours. The longer it cooks the better it is I think.

Leftover Roast Brunswick Stew Recipe

January 22nd, 2009 at 11:48am Under beef+ crockpot soup+ leftovers+ stew

This is a very good Brunswick stew made with last night’s leftover pot roast. Southern style BBQ sauce works best. Don’t use honey BBQ or other really sweet sauces because they make the stew too sweet.

Ingredients

1 1/2 lb. cooked, shredded beef chuck roast
2 10-oz. cans mixed vegetables, with liquid
2 1/2 C. barbeque sauce
2 Tbs. Worcestershire sauce
1 10.5-oz. can beef broth (optional)

Crockpot Beef and Black Eyed Peas Recipe

January 13th, 2009 at 08:49am Under beef

The crockpot does wonders for lean cuts of beef, which can be tough and chewy. A day in the crockpot makes beef meltingly tender. The beauty of this all-in-one meal is that beef is just one part of this stew, so you really don’t need to use more than 3/4 of a pound to feed six people. Added protein and fiber comes from the black-eyed peas.

Ingredients

1 lg. onion, sliced
2 carrots, chopped
3 ribs celery, chopped
3 sm. red potatoes, quartered
1 sm. green pepper, chopped
1 jalapeno pepper, chopped
1 8-oz. pack sliced mushrooms
1 can black eyed peas, drained and rinsed
2 Bay leaves
3/4 lb. lean stewing beef
1 Tbs. Worcestershire Sauce
3 C. no-salt added tomato sauce
