Under chicken+ crockpot soup+ sausage+ spicy+ stew
This hearty flavorful stew holds well and is wonderful the next day. I often mix this up before work and dinner is ready when we get home.

Ingredients
2 Tbs. butter
2 med. onions, coarsely chopped
2 med. potatoes, coarsely chunked (1/2 inch)
2 med. carrots, peeled and coarsely chunked (1/2 inch)
2 garlic cloves, minced
2 stalks celery, sliced
1 lb. boneless chicken breast
1 lb. smoked sausage
1 14-oz. can diced tomatoes
2 C. marinara sauce
2 C. chicken broth
2-3 tsp. Cajun spice (to taste)
1 tsp. oregano
salt and pepper to taste

This is a wonderful recipe for good ol’ chicken stew.

Ingredients
2 lb. boneless, skinless chicken breasts, washed, patted dry, cut into 1-inch cubes
3 medium onions, peeled, quartered
2 large carrots, peeled, cut into 1-inch-thick slices
2 potatoes, peeled, cut into 1-inch cubes
2 14 oz. cans fat-free, 1/3-less-sodium chicken broth
1 tsp. celery seed
1 tsp. dry thyme leaves
1/2 tsp. black pepper
8 oz. mushrooms, cleaned, halved
1 C. frozen corn
1 C. frozen peas
Directions
In a 5-to-6-quart slow cooker, combine the chicken, onions, carrots, potatoes and broth. Stir in the celery seeds, thyme, pepper, mushrooms and corn. Cover and cook on low until the chicken is done and the vegetables are tender, about 7-9 hours, or on high for 4-6 hours. Stir in the peas and cook until they’re done, about 15-30 minutes.

A very tasty chicken version of traditional chili. This won first prize at our church chili cookoff!

Ingredients
Meat of one whole rotisserie chicken
1 large onion, chopped (1 C.)
1/4 C. butter
1 clove of garlic, chopped or pressed
1 Tbs. chili powder
1/2 tsp. salt
1 tsp. ground cumin
2 tsp. cocoa
1 Tbs. brown sugar
Splash Worcestershire sauce
1/2 tsp. red pepper sauce
2 small cans tomato paste
1 can red kidney beans, undrained
1 can great northern beans, undrained
Directions
Saute onion and garlic in butter until golden and tender. Transfer this and all other ingredients to a large crock pot. Cook on high for 1 hour, then reduce to low heat and cook an additional hour.

This is a great dish that isn’t expensive nor does it take a lot of time to make.

Ingredients
2 C. chopped onion
2 cloves garlic, minced
1 Tbs. olive oil
2 15-oz. cans white beans, drained
14.5 oz. can chicken broth
2 4-oz. cans diced green chiles
2 Tbs. Italian seasoning
4 C. cubed, cooked chicken breast
1 C. shredded Monterey Jack cheese
1 C. chunky salsa (mild or hot)
1/2 C. chopped fresh cilantro
Directions
In a 4-qt. pot, sauté the onion and garlic in oil until onions are tender. Stir in beans, chicken broth, chilies and seasoning. Bring to boil; reduce heat and simmer 10 minutes. Stir in chicken; heat through. Garnish each serving with cheese, salsa and cilantro.

Ingredients
1 lb. leftover turkey or chicken, cubed (deboned)
1 sm. onion, chopped
3 carrots, sliced
3 celery stalks, sliced
1 C. brown rice, cooked
1 C. regular rice, cooked or uncooked Minute Rice
2 chicken bouillon cubes
1/4 C. butter or margarine
2 tsp. parsley flakes
2 C. water
Directions
Combine all ingredients in large crockpot and cook on high 4 hours or low overnight. OR: Bring to a boil on stove top in kettle, then low heat for 2 hours.

1 C. green beans
1 C. corn
1/4 tsp. pepper
1/4 tsp. salt

This recipe is so easy! You won’t believe how little effort goes into it. My kids love it too. Just throw it in the crock pot in the morning, and come home to a wonderful family dinner with just a few other ingredients.

Ingredients
2 lb. skinless, boneless chicken breasts, cut into 1″ cubes
2 can fat-free chicken broth
3 C. potatoes, peeled, cubed
1 C. onion, chopped
1 C. celery; slice
1 C. carrots; slice thin
1 tsp. paprika
1/2 tsp. pepper
1/2 tsp. rubbed sage
1/2 tsp. dried thyme
1 6 oz. can no-salt-added tomato paste
1/4 C. cold water
3 Tbs. cornstarch
Directions
In a slow cooker, combine the first 11 ingredients; cover and cook on high for 4 hours. Mix water and cornstarch until smooth; stir into stew. Cook, covered, 30 minutes more or until the vegetables are tender.

This is an easy crock pot or slow cooker chicken soup. I needed to extend one can cream of chicken soup and 4 chicken breasts to feed more than 2 or 3 people… my family loved it. It’s great for cold days!
