Under chicken+ chili+ crockpot soup
This is a wonderul red chili crockpot recipe for those cold days. Easy to make and delicious. Serve with a helping of cornbread or flour tortillas. Mmmm Good! Make it as mild or hot to your taste.

Ingredients
1 lg. can petite diced tomatoes
1 sm. can petite diced tomatoes
1 can original rotel tomatoes
1/2 jar roasted red peppers, diced
3 lg. boneless chicken breasts
1 pt. frozen Bueno hot green chilies
2 Tbs. red chili powder
1 tsp. cumin
3 cloves fresh garlic, diced
2 onions, diced
5 carrots, cubed
5 cans chicken broth
1 can white beans, rinsed
1 can pinto beans, rinsed
1 can black beans, rinsed

This is our favorite crockpot chili and we’ve tried several. To make it truly decadent, ignore me whenever I indicate something is optional.

Ingredients
1 1/2 lbs. beef shoulder top boneless blade steaks or flat iron steaks (I use top sirloin)
1 Tbs. canola oil
2 C. chopped onions
1 C. chopped green sweet peppers
4 garlic cloves, minced
2 15 oz. cans kidney beans or pinto beans or black beans, rinsed and drained (I mixed kidney and pintos)
1-2 tsp. chopped chipotle chilies in adobo
1 15 oz. can tomato sauce
1 15 oz. can diced tomatoes, undrained
1/2 C. water
4 Tbs. chili powder
1 tsp. dried basil, crushed
12 tsp. black pepper
shredded cheddar cheese optional
sour cream optional
chopped onions or scallions optional
avocados, slices optional

1 1/2 C. celery, chopped

4 oz chili peppers, drained seeded and chopped
2 Tbs. sugar
1 bay leaf
1 tsp salt
1 tsp marjoram, dried — crushed
1/2 tsp garlic powder
1 dash pepper

Ingredients
2 lb. ground beef, brown and remove grease
1 1/2 C. chopped onion
1 C. chopped green pepper
2 garlic cloves finely minced
1 28 oz. can stewed or diced tomatoes, undrained
2 16 oz. cans kidney beans, 1 light, 1 dark, undrained
2 tsp. salt
1 tsp. black pepper
1 tsp. cumin
2 Tbs. chili powder
Directions
After ground beef is prepared and drained, add all other ingredients and simmer for 7-10 hours. If too spicy, add a sprinkle of cinnamon.
Yield: 8-10 servings
