Ingredients
1 large onion, chopped (1 C.)
1 medium green bell pepper, chopped (1 C.)
2 medium celery stalks, chopped (1 C.)
3 garlic cloves, finely chopped
1 can (28 oz.) Progresso® diced tomatoes, undrained
2 C. chopped fully cooked smoked sausage
1 Tbs. parsley flakes
1/2 tsp. dried thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. red pepper sauce
3/4 lb. uncooked peeled deveined medium shrimp, thawed if frozen
4 C. hot cooked rice

Under chicken+ classics+ crockpot soup
This recipe is easy and takes the work out of making dumplings. It’s creamier than the traditional chicken and dumplings. Calories and sodium content can be reduced using reduced calorie and low sodium soup. This can also be made in a soup pot on top of the stove by reducing the cooking times.

4 boneless chicken breasts
1 large pkg. frozen mixed vegetables
2-3 cans cream of chicken soup
1 medium onion, chopped
1 can refrigerator biscuits (8-10 ct.)
3 cans chicken broth

2 lb. potatoes (about 5 to 6 medium)
3 Tbs. all-purpose flour
5 C. chicken broth
2 medium leeks, rinsed and chopped
3 Tbs. minced fresh dill
1 1/2 C. chopped cooked ham
3/4 C. Half & Half or cream
Salt and ground pepper to taste
