Under chicken+ crockpot soup+ sausage+ spicy+ stew
This hearty flavorful stew holds well and is wonderful the next day. I often mix this up before work and dinner is ready when we get home.

Ingredients
2 Tbs. butter
2 med. onions, coarsely chopped
2 med. potatoes, coarsely chunked (1/2 inch)
2 med. carrots, peeled and coarsely chunked (1/2 inch)
2 garlic cloves, minced
2 stalks celery, sliced
1 lb. boneless chicken breast
1 lb. smoked sausage
1 14-oz. can diced tomatoes
2 C. marinara sauce
2 C. chicken broth
2-3 tsp. Cajun spice (to taste)
1 tsp. oregano
salt and pepper to taste

Ingredients
2 lb. boneless, skinless chicken breasts, washed, patted dry, cut into 1-inch cubes
3 medium onions, peeled, quartered
2 large carrots, peeled, cut into 1-inch-thick slices
2 potatoes, peeled, cut into 1-inch cubes
2 14 oz. cans fat-free, 1/3-less-sodium chicken broth
1 tsp. celery seed
1 tsp. dry thyme leaves
1/2 tsp. black pepper
8 oz. mushrooms, cleaned, halved
1 C. frozen corn
1 C. frozen peas
Directions
In a 5-to-6-quart slow cooker, combine the chicken, onions, carrots, potatoes and broth. Stir in the celery seeds, thyme, pepper, mushrooms and corn. Cover and cook on low until the chicken is done and the vegetables are tender, about 7-9 hours, or on high for 4-6 hours. Stir in the peas and cook until they’re done, about 15-30 minutes.

4 C. hot cooked rice

This is creamy soup that everyone loves. A delicious start to any meal.

Ingredients
8 potatoes, peeled and chopped
1 sweet onion, chopped
2 carrots, peeled and diced
1/2 tsp. dried rosemary
1 can chicken broth
2 Tbs. fresh, minced parsley
1 1/2 tsp. salt
1/4 tsp. ground pepper
1 C. 2% or skim milk
1/2 C. all-purpose flour
Toppings: sliced green onions, grated cheese, or crumbled bacon
Directions
Sauté the onion in a skillet with a little oil till tender. Add to the crockpot with the potatoes, carrots, rosemary, broth and parsley. Add water to about 2 inches from the top of the crock. Season with the salt and pepper. Cook on high for 8 hours. 1 hour before serving, put milk into a measuring C. or jar. Add flour and whisk till combined. Add to the soup.

1 lb. leftover turkey or chicken, cubed (deboned)
1 sm. onion, chopped
3 carrots, sliced
3 celery stalks, sliced
1 C. brown rice, cooked
1 C. regular rice, cooked or uncooked Minute Rice
2 chicken bouillon cubes
1/4 C. butter or margarine
2 tsp. parsley flakes
2 C. water
Directions
Combine all ingredients in large crockpot and cook on high 4 hours or low overnight. OR: Bring to a boil on stove top in kettle, then low heat for 2 hours.

2-3 large potatoes
2 cans cream of chicken soup
1 can chicken broth
1/2 C. onion
1 tsp. chili powder
1 small can green chillies
Fresh cilantro, to taste (optional)

2 C. lentils
1/2 lb. ham, diced
1 onion, chopped
1 bay leaf
2 ribs celery, chopped
1 clove garlic, minced
salt and pepper, to taste
Directions
Combine all ingredients with 2 qts. water in the Crock Pot. Cook on low, covered, 8 to 10 hours. Adjust seasonings and serve.
