Under crockpot soup+ minestrone+ vegetable
This vegetarian soup with kidney beans and macaroni cooks up in the crockpot.

Ingredients
1 C. chopped onion
1 C. chopped celery
1 (14 or 12 oz.) can diced tomatoes, undrained
1 (19 oz.) can kidney beans, drained
2 (14 oz.) cans vegetable broth
3 C. water mixed with spring vegetable soup mix
1 tsp. oregano
1 1/2 C. small shell macaroni, uncooked
1/2 C. Grated parmesan cheese

3 C. low salt vegetable or chicken broth
1 28 oz. can diced tomatoes, with juices
1 15 oz. can white beans, drained and rinsed
2 medium carrots, peeled and diced
2 celery stalks, diced
1 small onion, diced
1 tsp. dried thyme
1/2 tsp. dried sage
2 bay leaves
Salt and ground black pepper
1 medium zucchini, diced
2 to 3 C. triple washed fresh baby spinach leaves
4 Tbs. freshly grated Parmesan or Romano cheese
2 C. cooked al dente small shells or ditalini
