Corn Chili Beef Stew Recipe

This is a very easy dish to make using a slow cooker process. If you like beef stew, chili beans with meat and corn, you will love this. Can be as spicy as you like depending on how much paprika or cayenne pepper you use.

Ingredients
3 lb. lean beef, cut into 1 1/2-inch cubes
2 cans chili with beans
1 can corn
2 lg. russet potatoes cut into bite-sized cubes
3 stalks cleaned celery cut up into 1-inch lengths
3 lg. carrots cut into 1/2-inch lengths
1 1/2 Tbs. black pepper
1 Tbs. either paprika or cayenne pepper
Directions
Using a 7-qt. crock pot,
Cut up potatoes, celery, and carrots and place into pot, mixing them together.
Add the cut up lean beef to pot. Mix together and add half the required black pepper required and stir together.
Add the 2 cans of chili with beans and the 1 can of corn and stir to mix together and additional black pepper and paprika seasoning and mix all together.
Within 2 hours you should start to smell the mixture cooking. It will be ready after 6-8 hours.
