Mom Ellen’s Two Alarm Texas Style Chicken Chili Recipe

Being full-time RVers, my husband and I are frequently on the road in our 40 foot motor home. I often put dinner up in the crock pot in the morning, set the crock pot into the kitchen sink and let it cook all day as we travel. By the time we get to our destination, our mouths are usually watering for a scrumptious meal we’ve been smelling all day long.

Ingredients
2 lbs. cooked boneless, skinless chicken breasts (you can substitute coarse ground or diced beef chuck, round steak, stew meat, venison, or turkey)
1 lg. can diced tomatoes (or Rotel tomatoes)
1/3 C. chili powder
1 Tbs. minced garlic
2 tsp. ground red pepper
1 Tbs. paprika
1 tsp. cumin
2 tsp. salt
1 Tbs. onion flakes
1 tsp. oregano
2 Tbs. Masa or any thickening agent
2 cans great Northern beans
2 cans kidney beans
1-2 C. chicken broth
Directions
Do not drain any ingredients. Dump everything into your crock pot or slow cooker and simmer for 4 hours on high or 8 hours on low.
