Southwest Bean Soup Recipe

This fabulous crockpot soup is filled with flavor. With three different types of beans and lots of other yummy goodies, this soup could be a filling lunch or dinner served with cornbread.

Ingredients

1 lb. lean ground beef
1 medium white onion, chopped fine
1 can kidney beans
1 can black beans
1 can pinto beans
1 can stewed sliced tomatoes
1 can corn
1 can sliced black olives
1 can diced green chilies
1 container fresh salsa
1 C. water
1 bay leaf
2 cloves garlic, minced
2 Tbs. taco seasoning
2 tsp. cumin

Directions

Combine all ingredients in a crock pot on low. Cook 7-8 hours, stirring occasionally. Ladle soup into bowls and top with sour cream, cheddar cheese, and green onions.  Serve with cornbread or tortilla chips.
