Basic Texas Chili Recipe

Ingredients

2 lb. beef chuck, cut into 1/2″ cubes, all white removed
1 small onion, chopped fine
1-2 cloves garlic, minced
Salt and black pepper to taste
Water or beef broth
2-3 Tbs. chili powder
1 Tbs. ground cumin
1 8 oz. can tomato sauce
2 Tbs. flour or cornmeal
1/2 C. water

Cheater Chili Recipe

We came up with this recipe during a long camping trip! It’s very easy and great for fast meals while camping.

Ingredients

1 lb. ground beef, browned and drained
1 28-oz. can chili beans w/seasonings
2 14-oz. cans kidney beans, rinsed and drained
1 28-oz. can spaghetti sauce
1 14.5-oz. can Hunt’s diced tomatoes with green chilies, undrained
1 lg. onion, chopped
2 cloves garlic, minced
2 stalks celery, chopped
1 pkg. chili seasoning
1 green pepper, chopped
1 red pepper, chopped
salt and pepper to taste
2 tsp. parsley (optional)

Spicy Pineapple Pork Chili (Crockpot) Recipe

Ingredients

1 lb. lean boneless pork, trimmed and cut into 1-inch cubes
1 C. dried small white beans, rinsed and drained
1 C. hot water
1 can (14-1/2 oz.) diced tomatoes
1 can (6 oz.) tomato paste
1 can (20 oz.) pineapple chunks, drained, juice reserved
1 can (4 oz.) diced green chilies
1 medium onion, chopped
1 tbsp chili powder (or more or less to taste)
1 tbsp cumin (or less to taste)
1/2 tsp garlic powder

Slow-Cooked Chili Recipe

Ingredients

2 lb. ground beef, brown and remove grease
1 1/2 C. chopped onion
1 C. chopped green pepper
2 garlic cloves finely minced
1 28 oz. can stewed or diced tomatoes, undrained
2 16 oz. cans kidney beans, 1 light, 1 dark, undrained
2 tsp. salt
1 tsp. black pepper
1 tsp. cumin
2 Tbs. chili powder

Directions

After ground beef is prepared and drained, add all other ingredients and simmer for 7-10 hours.  If too spicy, add a sprinkle of cinnamon.

Charming Chili Recipes

This recipe was given to me by a friend. Everyone loved it. I especially make it in December when Santa comes to visit. We have a house full of people afterward and the adults and children love it.

Ingredients

1 can cannellini beans
1 can kidney beans
2 lb. chop meat, any mix or kind (chicken, turkey, beef)
1 large can Mexican-style diced tomatoes
1 large can Hunt’s tomato sauce
3 grinds black pepper
2 tsp. garlic powder
1 chili flavor packet, divided
2 orange/yellow peppers, chopped
1/2 onion, chopped
8 oz. shredded cheese, garnish
1/2 C. green onions, chopped (garnish)
1 can sliced, pitted black olives (garnish)

2-3 lbs. chuck or sirloin steak, cut 1/2-inch thick
1Tbs. vegetable oil
1 large onion
3 cloves garlic
1tsp. salt
2- fresh jalapenos, seeded and chopped
1/4 C. dark chili powder
2 tsp. ground cumin
1 C. dark beer
1/2 C. water
1/4 C. masa (or cornmeal)

2 15 oz cans tomatoes or tomato sauce (I use tomatoes)
5 allspice
1/2 tsp. red pepper
1 tsp. ground cumin
up to 4 Tbs. chili powder (to taste)
1/2 oz bitter chocolate
2 Tbs. vinegar
1 bay leaf
5 cloves
2 tsp. Worcestershire sauce
1 1/2 tsp salt

Just Plain Chili Recipe

While it certainly is chili, it’s anything but plain.

Ingredients

1 lb. ground beef
1 can whole tomatoes
1 onion, chopped
1 clove garlic
2-3 Tbs. chili powder (to taste)
1 tsp. paprika
1 tsp. ground cumin
1 tsp. oregano
1 Tbs. dry parsley flakes
1/2 tsp. salt
1 can red beans, drained and rinsed (optional)

Directions

Brown ground beef and onions; drain. Add seasonings, cover and simmer over low heat for 1 hour, stirring frequently. You can also add to crock-pot and cook for 4 hours on low.
