Ingredients
2 lb. beef chuck, cut into 1/2″ cubes, all white removed
1 small onion, chopped fine
1-2 cloves garlic, minced
Salt and black pepper to taste
Water or beef broth
2-3 Tbs. chili powder
1 Tbs. ground cumin
1 8 oz. can tomato sauce
2 Tbs. flour or cornmeal
1/2 C. water

We came up with this recipe during a long camping trip! It’s very easy and great for fast meals while camping.

Ingredients
1 lb. ground beef, browned and drained
1 28-oz. can chili beans w/seasonings
2 14-oz. cans kidney beans, rinsed and drained
1 28-oz. can spaghetti sauce
1 14.5-oz. can Hunt’s diced tomatoes with green chilies, undrained
1 lg. onion, chopped
2 cloves garlic, minced
2 stalks celery, chopped
1 pkg. chili seasoning
1 green pepper, chopped
1 red pepper, chopped
salt and pepper to taste
2 tsp. parsley (optional)

Ingredients
2-4 lb. ground chuck
4 cans tomato sauce
1 medium can tomato paste
1 large can tomatoes
3-4 Tbs. chili powder
1 large onion
4 cans chili beans
1-2 tsp. hot sauce (I use Texas Pete but any kind will do)
Salt and pepper to taste
Directions
In pan cook meat and onion. Drain grease. Add 1 can tomato sauce and 1 Tbs. chili powder. In large pot add 3 cans tomato sauce, can of tomatoes, tomato paste, 2 Tbs. chili powder and salt and pepper. Cook on medium heat. Add 4 cans chili beans and the meat and onion mixture you cooked in the beginning. You can add more chili powder and hot sauce to your taste. Let simmer on low heat 2-5 hours. The longer it cooks the better it is I think.

Ingredients
1 lb. lean boneless pork, trimmed and cut into 1-inch cubes
1 C. dried small white beans, rinsed and drained
1 C. hot water
1 can (14-1/2 oz.) diced tomatoes
1 can (6 oz.) tomato paste
1 can (20 oz.) pineapple chunks, drained, juice reserved
1 can (4 oz.) diced green chilies
1 medium onion, chopped
1 tbsp chili powder (or more or less to taste)
1 tbsp cumin (or less to taste)
1/2 tsp garlic powder

A very tasty chicken version of traditional chili. This won first prize at our church chili cookoff!

Ingredients
Meat of one whole rotisserie chicken
1 large onion, chopped (1 C.)
1/4 C. butter
1 clove of garlic, chopped or pressed
1 Tbs. chili powder
1/2 tsp. salt
1 tsp. ground cumin
2 tsp. cocoa
1 Tbs. brown sugar
Splash Worcestershire sauce
1/2 tsp. red pepper sauce
2 small cans tomato paste
1 can red kidney beans, undrained
1 can great northern beans, undrained
Directions
Saute onion and garlic in butter until golden and tender. Transfer this and all other ingredients to a large crock pot. Cook on high for 1 hour, then reduce to low heat and cook an additional hour.

Ingredients
2 lb. ground beef, brown and remove grease
1 1/2 C. chopped onion
1 C. chopped green pepper
2 garlic cloves finely minced
1 28 oz. can stewed or diced tomatoes, undrained
2 16 oz. cans kidney beans, 1 light, 1 dark, undrained
2 tsp. salt
1 tsp. black pepper
1 tsp. cumin
2 Tbs. chili powder
Directions
After ground beef is prepared and drained, add all other ingredients and simmer for 7-10 hours. If too spicy, add a sprinkle of cinnamon.

Ingredients
2 C. chopped onion
2 cloves garlic, minced
1 Tbs. olive oil
2 15-oz. cans white beans, drained
14.5 oz. can chicken broth
2 4-oz. cans diced green chiles
2 Tbs. Italian seasoning
4 C. cubed, cooked chicken breast
1 C. shredded Monterey Jack cheese
1 C. chunky salsa (mild or hot)
1/2 C. chopped fresh cilantro
Directions
In a 4-qt. pot, sauté the onion and garlic in oil until onions are tender. Stir in beans, chicken broth, chilies and seasoning. Bring to boil; reduce heat and simmer 10 minutes. Stir in chicken; heat through. Garnish each serving with cheese, salsa and cilantro.

1 can whole tomatoes
1 onion, chopped
1 clove garlic
2-3 Tbs. chili powder (to taste)
1 tsp. paprika
1 tsp. ground cumin
1 tsp. oregano
1 Tbs. dry parsley flakes
1/2 tsp. salt
1 can red beans, drained and rinsed (optional)
Directions
Brown ground beef and onions; drain. Add seasonings, cover and simmer over low heat for 1 hour, stirring frequently. You can also add to crock-pot and cook for 4 hours on low.
