Under crockpot soup
Whether made in a crockpot or one the stove, this chicken and black bean soup is simple and delicious.

Ingredients
1 15-oz. can corn
1 15-oz. can black beans
1 10-oz. candiced tomatoes with green chili peppers and onions
2 14.5-oz cans chicken broth
1 C. cooked and diced chicken
1/4 med. onion finely chopped (optional)

Under Mexican+ crockpot soup
A relatively quick soup that’s almost easier than having your favorite Mexican restaurant make it for you! Adjust the heat level to your liking. The garnishes here really take this soup over the top, so no fair skipping!

Ingredients
1 15 oz. can tomato sauce
1 15 oz. can diced tomatoes
3 cups shredded cooked chicken (I use rotisserie from the deli)
2 Anaheim chilies, diced
1 jalapeno pepper, diced
1/2 cup diced onions
3-4 large tomatoes, diced
2 garlic cloves, minced
2 Tbs. minced cilantro
1 Tbs. chili powder
2 tsp. cumin
2 tsp. pepper
1 tsp. salt
2 tsp. Tabasco sauce (I use the chipotle flavor)
1/2 tsp. chipotle peppers (optional)
Garnishes:
1 C. shredded cheddar cheese
1 avocado, chopped
1/4 C. cilantro, pulled from stem
1 lime, cut into wedges
2 C. crushed tortilla chips
