Tennessee Steak Crock Pot Soup Recipe

This is such a great recipe for anyone! What I love the best about this recipe is as it cooks in the crock pot, the house smells just wonderful!

Ingredients

1 stick butter
1/2 C. all-purpose flour
4 (10 oz.) cans beef consommé
1/2 C. diced fresh carrots
1/2 C. diced fresh celery
1/2 C. diced fresh onions
1 8-oz. can tomatoes, chopped
1/2 tsp. ground black pepper
1 1/2 tsp. Worcestershire sauce
2 beef bouillon cubes
1/2 tsp. Accent
1 10-oz. pkg. frozen mixed vegetables
1 lb. ground steak, browned and drained

Vegetable Soup Recipe

This is colorful and delicious! Use all fresh vegetables when possible. Serve with my “whole wheat bread” recipe found here.

Ingredients

3 C. chicken broth
1 quart tomato juice
1 C. potatoes, cubed
1 C. carrots, sliced
1 C. peas
1 C. green beans
1 C. corn
1/4 tsp. pepper
1/4 tsp. salt

Directions

Combine all ingredients in crockpot. Cook on low for 6-8 hours or until all vegetable are tender. Serve with my “whole wheat bread” recipe found here.

This soup is wonderful in the fall and winter! It tastes so good that you would never know that it is fat free. For a heartier soup, add some browned hamburger or ground turkey.

4 potatoes, cubed
1 9-oz. pkg. frozen green beans
1 med. onion, chopped
2 cloves garlic, minced

1 Tbs. dried parsley
3/4 tsp. dried oregano
1 tsp. herb seasoning
salt to taste
1 can light red kidney beans, rinsed and drained

This chunky vegetable chili cooks up in a slow cooker and is like a bowl of very thick vegetable soup. Three types of legumes combine with a rich, spicy tomato broth to create a zesty and flavorful dish. You can be creative when you make this chili by adding other seasonal vegetables or ones you may have in your refrigerator.

2 Tbs. olive oil
1 large onion, chopped
4 cloves garlic, minced
1 large green bell pepper, cored, seeded, and chopped
1 large red bell pepper, cored, seeded, and chopped

2 tsp. ground cumin
1 tsp. paprika

1 quart beef broth (left from the roast combined with water or add canned broth if necessary)
1 C. tomato sauce
1/2 C. minced onion
1 C. cabbage
2 C. mixed vegetables of your choice
1/2 tsp. dried basil, thyme or oregano (or mixed)
1/8 tsp. pepper
1/4 C. uncooked small pasta shells or noodles
1 C. leftover shredded or cubed roast beef

2 14 oz. cans diced tomatoes with garlic, undrained
